For a competition in Sligo, chefs offer a variety of takes on creating an Irish stew.

The first World Irish Stew Making Championships were hotly contested at the start of the inaugural Sligo Só Food Festival. There were some unusual twists to an old favourite on show at St Angela's College in Sligo.

We had it braised in pear cider, cooked in wild herbs, we even had a Turkish version.

Ahmet Dede reveals his secret ingredient of white bread and mustard to thicken the stew. Joe Shannon, Sligo Só Food Festival, explains the origins and popularity of the stew and how it has evolved through the years.

Good basic stews with individual twists proved to be a winner with the judges. Joe Clinton won the title as World Professional Irish Stew Champion for combining his recipe with homemade soda bread with prune and rosemary. The amateur winning stew made by Linda Devlin, contained gluten-free dumplings and red cabbage.
