The importance of good hygiene in the handling, preparation and storing of food.

The Irish Quality Control Association recognises companies with the cleanest environments and most hygienic work practices at the National Hygiene Awards.

The overall competition winner is Swissco, Little Island County Cork, which also took home the top meat plant award. Other winners included Wexford Creameries, The Sand Hotel, Donegal, Quinnsworth, in Blanchardstown, Dublin, and Val's Pub, Ballyhaunis.

Ultimately the Irish Quality Control Association awards highlight the necessity of good hygiene and the correct ways to prepare, cook and store food safely.

As summer approaches employers should ensure the utmost cleanliness of working surfaces and equipment. Food must be stored in a cold and clean unit, and the shortest time possible elapses between the work surface and the cooking pot. In addition,
