A great treat.
Ingredients
- 5 chicken thighs, skinned, trimmed, deboned
- 1 carrot, peeled and cut into 4 chunky cuts
- 1 tsp curry powder
- 1 tsp honey
- 1-2 tsp soy sauce
- Fresh coriander
- Lemon juice
- ½ clove garlic
- For the Oriental Dipping Sauce:
- 1 tsp Hoisin sauce
- 1 tblsp honey
- 10g fresh ginger, chopped
- 1 tblsp soya sauce
- 2 tsp fresh coriander
- 2 tblsp water
Method
- For the Oriental Dipping Sauce: Blend all ingredients and add water later for consistency.
- For the Chicken Thigh Kebab: Add the carrot chunks to boiling water.
- Add the chicken thighs and boil for 9 minutes (in with the carrots).
- Strain and put in a bowl.
- Add spices.
- Skewer chicken and carrots and drizzle peanut sauce over.
