Eggs are considered one of the most versatile ingredients. On Today with Maura and Dáithí, Richy Virahsawmy shows us how to make a delicious curry made from egg, potato, cauliflower and spinach.
Ingredients
- 3 tbsp rapeseed oil
- 1 large diced onion
- 6 cloves of garlic crushed
- 1 red chilli
- 1-inch grated ginger
- 2 large diced rooster potatoes
- 1 tbsp curry powder
- 1 tsp garam masala
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 6 hard boiled egg (9 mins)
- 100g baby spinach
- 200g cauliflower
- 2 large tomatoes diced
- 1 can coconut milk 400ml
- 1 ltr vegetable stock
- 50g fresh coriander
- 50g cashew nuts (optional)
Method
1. Heat a heavy-based pan, add oil, onion, chilli, ginger, garlic. Add diced potatoes and all spices.
a. Cook for 3-4 mins
2. Add cauliflower and veg stock
a. Cook for 8-10 mins
3. Add coconut milk and boiled eggs
a. Simmer for 10 min
4. Finish with baby spinach, diced tomato and top with cashew nuts (optional)
