Richy makes his delicious beef and venison stew on Today with Maura and Dáithí.

Ingredients

  • 250g diced beef
  • 150g diced venison
  • 4tbsp flour
  • 1 large onion chopped
  • 2 large carrots chopped
  • 4 rooster potatoes diced
  • 2 stalks celery diced
  • 2 cloves garlic crushed
  • Thyme
  • Tomato Purée 
  • Bay leaf
  • 100ml red wine
  • 1 ltr beef stock
  • Salt & pepper
  • 1 knob butter
  • Olive oil

Season the flour & coat the meat
Melt the butter & olive oil in a pan & brown the meat.
Remove the meat with a slotted spoon and place to one side.
Sautee the onion, garlic & celery and tomato purée 
Add the red wine to deglaze the pan.  Put the meat back in.  Add all the other ingredients & simmer for  1 ½ to 2 hours.

Method
