Richy Virahsawmy's Pork Chops, Brussels Sprouts, Apples & Gubbeen Bacon


  • 4 pork chops
  • 2tsp extra virgin olive oil
  • 1tsp sea salt
  • ½ tsp smoked paprika
  • 1 sprig of rosemary
  • 2 cloves of garlic
  • 1 star anise
  • 2 apples, quartered
  • 40g smoked Gubbeen bacon diced
  • 400g Brussels sprouts
  • 150g butter
  • 200ml  cider
  • 50ml cream


  1. Marinate pork chops with smoked paprika, rosemary, garlic, olive oil
  2. In a non-stick pan sear the pork chops, season with salt and pepper
  3. Slice the sprouts and add to the same pan with the bacon, apples and star anise
  4. Put in the hot oven for 6-8 minutes or until cooked through
  5. De-glaze pan with the cider, reduce by half and then finish with the butter and cream
