Mr Borza and his son are among the early morning visitors to the fish market in Dublin looking for a good price .
He's in the fish and chips trade and he has his eye on a box of whiting.
The Borzas purchase whiting and ray. The fish are cleaned, gutted and prepared at the Borza family fish and chip shop. Potatoes are peeled and chipped, and fish is battered and ready for the fryer.
