The perfect healthy and yummy dish that works cold or warm. You can pack it up and take it into work for lunch or serve it up for all the family.
- 1 Cup of Quinoa, Uncooked
- 2 Cups of Stock (Chicken or Veg)
- 100g of Cherry Tomatoes
- 1 Red Onion
- 10g of Fresh Coriander
- 1 Ripe Avocado
- 140g of Sweet Corn
- 50g of Feta
- Juice of 2 Limes
- 3 Tablespoons of Olive Oil
Method
- Add the quinoa and stock to a medium saucepan and pop the lid on. Cook it on medium heat until all of the liquid has been absorbed.
- Then take it off the heat, fluff it and then pop the lid on for an additional five minutes. Remove the lid and set it aside to cool.
- When the quinoa is cooled, dice the red onion and chop the cherry tomatoes in half. Roughly chop the fresh coriander and cut the avocado into cubes.
- Add the onion, tomatoes, coriander, avocado and sweet corn to a large bowl.
- Combine the olive oil and lime juice and whisk well. Add the cooled quinoa to the bowl, followed by the lime mixture and toss everything well.
- Crumble the feta in on top and serve.
