Ingredients
- for the pastry:
- 100 g unsalted butter
- 100 g icing sugar
- 225 g flour
- 1 egg lightly beaten
- 1 egg yolk
- for the filling:
- 6 passion fruit
- 125 g caster sugar
- 3 eggs
- 100 ml double cream
Method
- Make pastry, bake blind and then brush with egg yolk and leave to cool. This will stop the pastry from getting soggy.
- Scoop out passion fruit and push through a sieve. Discard the seeds.
- Whisk sugar and eggs till sugar has dissolved, very thick. Whisk in cream and passion fruit pour into pastry case and bake at 120°C until just set.
