- 4 pork chops
- 4 garlic cloves, peeled and sliced
- 4 cloves
- 2 lemons zest and juice
- 1 oranges zest and juice
- few bay leaves
- few sprigs rosemary
- 1 tbsp. fennel seeds
- 1 tsp. juniper berries
- splash ml olive oil
- salt and pepper
- 1 tbsp. honey or maple syrup
Method
- If you can marinate this the night before, happy days. Mix everything together and pour over the pork. When ready to cook, preheat oven to 200 C. Ideally bring it back up to room temperature before cooking it. Heat up a chargrill or heavy based frying pan. Char on both sides until you have great colour and then transfer to the oven, and cook for another 10-15 minutes. The juices should run clear and if you're unsure, just cut through the middle and check it out. If in doubt stick it back in for 10 minutes. Rest and serve with sprouting broccoli.
