Food writer Brenda Costigan offers advice for successful Christmas cooking.
Christmas Day dinner as most of us know it dates from an earlier era when servants were in charge of cooking. Today usually just one person is cooking the Christmas dinner. Food writer Brenda Costigan says with a bit of advance planning it need not overwhelm the cook.
Ideally make a big list, what you want to do in advance. Stick it on your kitchen wall, and stick to it.
Turkey takes centre stage on most dinner tables on Christmas Day. Not everyone is fond of turkey leg meat. Brenda Costigan recommends removing the meat from the bone, stuffing and roasting it. She reminds viewers that the stuffing must be cold when the meat is being prepared,
Don't put warm stuffing into turkey and leave it sit overnight.
Vegetables can also be prepared in advance, while a meat free option for family and friends who are vegetarians might be a mushroom and nut loaf.
A green salad without lettuce can be served for the starter, and dessert comes in the form of cheesecake and Christmas pudding.
