A simple and tasty dish as seen on the Today Show

Ingredients

  • 8 mackerel fillets
  • 250 g tin of baked beans
  • 4 slices of toast
  • 1 onion finely diced
  • 2 rashers finely diced
  • 1 courgette finely diced
  • pinch of curry powder
  • little bit of rocket
  • 1 lime

Method

  • For the sauce:
  • Sweat off the bacon and onions
  • Add the courgettes and cook for 2 – 3 mins
  • Add baked beans and bring to the boil
  • For the Mackerel:
  • Season with salt and pepper
  • Pan fry in a very hot pan
  • Fry skin side down for @ 3 mins
  • Turn over and cook for 2 mins
  • Toast your bread
  • Spoon your beans on top
  • Garnish with a sprig of Rocket and a wedge of lime on the side.
