It's basically mixing ingredients together step by step & arranging a few potatoes on top & baking– the result is magnificent. A real weekender meal when you're looking for something nice to look forward to after a busy week.

- 400g white crab meat ( From most fish counters )
- 6 finely chopped scallions
- 50g very finely chopped roasted red pepper
- 50g very finely chopped artichoke ( you can sub capers or green olives )
- 50g sharp white cheddar or Parmesan
- 50g mozzarella
- 100g cream cheese
- 5g sour cream
- 2 cloves garlic
- Zest & juice of 1 lemons
- 1 tsp chilli powder or cayenne pepper
- 4 large rooster potatoes peeled & sliced ½ cm thick
- 1 tsp salt
- 1 x 9inch x 13 inch oven proof dish
- 1 x pastry brush & a little melted butter
Method
- Firstly, just check that there's no shell in the crab meat this is important
- Set the crab meat, sliced potatoes & parmesan aside
- In a mixer on low speed or in a bowl with a spatula mix the all the ingredients together
- Once evenly mixed add the crab meat & gently fold through the mix trying not to break it up 2 much.
- Spread the mixture evenly in the oven dish – arrange the potatoes across the mixture brushing the butter between each layer
- Top with the parmesan cheese & bake @180c for 35 minutes
- Leave gratin to cool for at least 20 minutes before serving
- Serve with some peppery leaves like rocket or watercress with a citrus or mustard vinaigrette
