A dish from the black team during MasterChef Ireland 2012

Ingredients

  • garlic
  • leeks
  • onions
  • veg stock
  • carrots
  • celery
  • potatoes
  • thyme
  • parsley
  • clams
  • mussels
  • prawns
  • cream
  • white wine
  • salt
  • pepper

Method

  • Fry the onion, garlic, celery, leek until soft.
  • Add the potatoes and fish stock until soft and broken apart
  • 20 mins before serving, add the mussels and clams along with the cream and white wine. Season to taste.
  • Add the parsley + thyme before serving
