  • 35 kg rib of beef off bone
  • salt
  • pepper
  • cumin
  • onion
  • rooster potatoes
  • leeks butter
  • milk


  • Season beef and place on a bed of sliced onions + garlic. Place in oven at 180
  • Peel and cut potatoes into 1/8. Boil in water seasoned with salt
  • Put potatoes through a ricer and mix with butter, salt, pepper and boiled milk
  • Cut and sweat the leeks. Put this through the potatoes
  • Place the juice from meat in saucepan with red wine , salt and pepper and reduce
  • Allow meat to rest for one hour. Cook for 1 hour 50 mins for medium.
  • Ready to serve
