A dish from the Amber Team on MasterChef Ireland 2012
Ingredients
- 35 kg rib of beef off bone
- salt
- pepper
- cumin
- onion
- rooster potatoes
- leeks butter
- milk
Method
- Season beef and place on a bed of sliced onions + garlic. Place in oven at 180
- Peel and cut potatoes into 1/8. Boil in water seasoned with salt
- Put potatoes through a ricer and mix with butter, salt, pepper and boiled milk
- Cut and sweat the leeks. Put this through the potatoes
- Place the juice from meat in saucepan with red wine , salt and pepper and reduce
- Allow meat to rest for one hour. Cook for 1 hour 50 mins for medium.
- Ready to serve
