Slow-cooked Meaty Chilli

When my girlfriend Sofie was growing up, her grandparents had one of the most amazing vegetable gardens in Sweden, with wild strawberries, and big, bushy apple trees. Huge rhubarb bushes still spring up every year and the last time we visited I made this creamy panna cotta, which is a wonderful way to enjoy some of the summer’s finest rhubarb.

Big Do's peach and blackberry cobbler

My granddad Do used to keep me and my cousins entertained all summer long on his boat with fishing, crab races and stories about pirates, deep-sea treasure and the biggest fish he ever caught! He liked his food, but never cooked – on our summer adventures with him, we were always under strict orders to bring sandwiches! Jam jumble crumble tart

This tart is a real lifesaver; it uses solely kitchen staple ingredients and is very easy to assemble. It reminds me of the little tarts I used to make when I first started baking but is a bit more sophisticated and I love the addition of desiccated coconut, which goes well with the jam. You can use whatever jam you have in your store cupboard, all flavours work perfectly.

Creamy Spinach Gnocchi

One of my favourite quick-fix suppers, this is full of fresh flavours and has a nice hum of heat from the chilli flakes. Gnocchi is easy to make yourself, but you can now pick up packets of the fresh variety in most supermarkets. If you happen to have fresh peas growing in your garden, feel free to use them instead of frozen.

Ribollita

Ribollita is an Italian soup that was traditionally seen as peasant food. The great thing about this soup is that it makes an ideal base for any additional ingredients that you might want to add. Think of it as an opportunity to give a last moment of glory to any miserable veggies left at the bottom of your fridge! I keep leftover Parmesan rinds in my freezer, which I add to sauces and soups like this to give a unique rich flavour. Add a couple while the soup is simmering and simply fish them out before serving.

Rich Tomato Italian Meatballs with Linguine

If I was to name one recipe that is ideal food therapy, it's this. There is something extremely relaxing about rolling the meat into little balls and plopping them into a boiling, rich, tomato sauce. I rely solely on the heat of the sauce to cook and infuse the balls with flavour and I love to serve the dish on a big platter with serving spoons, so that people can dig in at the table.

Mum's Coq au Vin Blanc

Coq au Vin Blanc was a regular winter dish in my house when we were growing up. I have distinct memories of it steaming up the kitchen windows while we did our homework on the kitchen table. It's a wonderfully warming meal, perfect for cold evenings. Chicken joints such as thighs and legs are often far cheaper to buy than chicken breasts, and meat cooked on the bone always seems to have more flavour.

Fridge Leftovers Frittata

Even the most sorry-looking kitchens should have a few eggs, veggies and a bit of leftover cheese knocking around. My fridge-leftovers frittata is a great little lunchtime dish; it's a filling base for lots of additions, depending on what's in your kitchen. Try adding leftover ham, chorizo, spinach, peas, herbs, all sorts really.

Turkey Meatloaf with a Spicy Bean Stew

On a recent visit to New York City, I tried the meatloaf in Kitchenette, a cool retro diner, and have been craving it ever since, which was why this recipe was born. It's true, unashamed comfort food and should be celebrated for being just that. You can make one big meatloaf and serve it in slices or I sometimes like to make mini ones and serve each sitting proudly on top of the spicy bean stew.
