What is your food product?
We offer a wide range of products at Krust Bakery from platters including donuts and gourmet sandwiches made on our high quality European style breads and our delicious 'cronuts'. Pastry, sweets as well as a selection of teas and our famous Marley coffee.
Our signature product is the 'cronut' pastry - a unique creation by Chef Dominique Ansel that many have described to be a croissant-doughnut hybrid. After its launch on May 10, 2013, cronut fans spanned the world from Berlin to Singapore, making it the most virally talked about dessert item in history.
The cronut is becoming one of the most popular dessert in today’s world. That is why we at Krust bakery are proud to have the cronut brand in our possession. Cronuts are a modern twist on your regular donut and suppling constant creativity with our flavoured twists on cronuts.
How are they made?
Our Cronuts are made by the bakery genius Daniel Linder who is constantly creating new innovative products! The Cronut take three days to make, thanks in part to the laminated dough. This is rolled together with a block of chilled butter to form layers, and needs a lengthy rest in the fridge. Two days before you’re allowed near the fryer, you must make a dough square. For unexplained reasons, you also have to make the ganache 48 hours ahead of time. On day two, you get the dough out of the fridge and roll it with a perfect square of butter made using parchment and a ruler. Then back in the fridge it goes until day three – a frenzy of frying, glazing, flavoured sugar and piping work. The equipment list specifies a stand mixer with dough hook, the ruler, piping bags and a deep-frying thermometer.
When and how did you first come up with the idea for the product?
In 2014 the idea sprung for cronuts to be introduced to Ireland. Rob and I started to research the market and find an appetite from retailers, and start to Introduce and sell the cronut in Ireland.
Who buys your products?
Cronut’s do not discriminate! Students, professionals, tourists and teenagers all enjoy the magic. We provide Catering which is a big plus for businesses around Dublin that would like some sweet treats or specialty sandwiches during board meetings.
Does your product carry the guaranteed Irish label?
At the moment we do not carry this label.
Is your product packaged in Ireland and is it recycled/recyclable?
Yes, our products are packed in Ireland and all packaging is recyclable.
Other than your own, what’s your favourite product?
I love the Dream Donut, with multi fruit jam on the inside, so good you’ll be dreaming about it.
What is your view on ‘organic’ produce?
The word Organic fascinates the public opinion because it refuses the use of chemicals in food production and preservation. Of course we all know the fresher the better, but sometimes it’s unrealistic for that to happen. We all have hectic days and resort to that ready-made meal or the convenient snack to keep us going. At Krust Bakery all of our gourmet sandwiches come in freshly baked specialty bread, which is of the highest quality. We provide gluten free, sourdough, ciabattas, roast onions rolls and the Gouda cheese rolls (my personal favourite).
Is there salt and/or sugar in your products? If so, how much and why? What is the shelf-life of your product and how come?
It would be next to impossible to have a product without salt and sugar that tastes great. Salt and sugar are needed in products for consistency and flavour without these you would have inconsistency, bread that is bland. The shelf life of our breads is one day the same goes for cronuts and doughnuts the reason being we bake fresh every day and want to provide the high standards to our customers
What would your death row meal be (aside from your own products!)?
This is a very tough question for a big foodie like me, from our own products I wouldn’t be able to just have one - if possible I would want one bite of every cronut we sell because frankly they are so irresistible it’s hard not to delve into temptation. Besides our own products I would have to say my mother’s Sunday roast which every Irish person knows nothing really compares to.
