Ingredients

Rice Krispie Squares

  • 100g butter
  • 300g marshmallows
  • 180g Rice Krispies
  • 100g milk chocolate

Cheesecake & Fruit Picnic Jars

Biscuit Base

  • 200g digestive biscuits
  • 80g melted butter

Cheesecake Filling

  • 300g cream cheese
  • 250ml whipped cream
  • 60g icing sugar
  • Zest of 1 lemon
  • 1 tsp vanilla

To Finish

  • Strawberries
  • Blueberries
  • Raspberries
  • Mint

Homemade Lemonade

  • 4 lemons, juiced
  • 120g caster sugar
  • 1 litre sparkling water
  • Ice
  • Lemon slices
  • Fresh mint

Method

Rice Krispie Squares

1. Melt butter and marshmallows gently together.
2. Stir through Rice Krispies quickly.
3. Press into lined tray.
4. Melt chocolate and drizzle over.
5. Chill until set and cut into squares.

Chef's Tip

Wet your spoon slightly when pressing them down so they don't stick.

Homemade Lemonade

1. Heat sugar with 150ml water until dissolved.
2. Cool completely.
3. Mix with lemon juice.
4. Add sparkling water.
5. Serve over ice with mint and lemon slices.

Chef's Tip

You can add strawberries or raspberries to make different flavoured lemonades.

Cheesecake & Fruit Picnic Jars

1. Crush biscuits and mix with melted butter.
2. Spoon into jars and press lightly.
3. Whisk cream cheese, icing sugar, vanilla and lemon zest until smooth.
4. Fold in whipped cream.
5. Pipe or spoon into jars.
6. Top with fresh berries and mint.

Chef's Tip

These are brilliant for picnics because there's no slicing or mess.
