Ingredients
Mini Quiche
- 1 sheet shortcrust pastry
- 4 eggs
- 200ml cream
- 100g grated cheddar
- 6 cherry tomatoes, halved
- 3 spring onions, sliced
- Small handful spinach
- Salt & pepper

Chicken Caesar Wraps
Perfect for a picnic because they travel really well.
- 4 Large tortilla wraps
- 2 cooked chicken fillets, sliced
- 1 baby gem lettuce, shredded
- 40 g parmesan shavings
- Crispy bacon pieces (optional)
- Smoked almonds, lightly crushed
Caesar Dressing
- 150g mayonnaise
- 80g natural yoghurt
- 1 garlic clove, crushed
- 1tsp Dijon mustard
- Juice half a lemon
- 25g grated parmesan
- Salt & black pepper

Puff Pastry Brie & Relish Bites
- 1 sheet puff pastry
- 1 wheel brie
- Onion relish or cranberry relish
- 1 egg yolk
- Thyme leaves
Parmesan Cheese Straws
- 1 sheet puff pastry
- 80g grated parmesan
- 1 tsp paprika
- Black pepper
- 1 egg yolk

Quick Hummus
- 1 tin chickpeas, drained
- 2 tbsp tahini
- Juice 1 lemon
- 1 garlic clove
- 3 tbsp olive oil
- Salt & pepper
- Splash cold water
Method
Mini Quiche
1. Preheat oven to 180°C.
2. Roll pastry slightly thinner and cut circles to fit muffin tray holes.
3. Grease tray and press pastry in gently.
4. Whisk eggs, cream, seasoning and cheese together.
5. Add spinach, tomatoes and spring onion into pastry cases.
6. Pour egg mix over.
7. Bake for 18–20 minutes until golden and set.
Chef's Tip
Don't overfill the quiches — the egg mix rises as it cooks.

Chicken Caesar Wraps:
1. Mix all dressing ingredients together until smooth
2. Taste and adjust seasoning
To assemble:
1. Lay the wraps flat
2. Spread Caesar dressing across centre
3. Add Lettice, chicken, parmesan and bacon
4. Sprinkle over crushed croutons for crunch
5. Fold sides inward and roll tightly
6. Slice in half on an angle for serving
Chef's Tip:
Don't overdress the wraps in making ahead- keep them fresh, not soggy.

Puff Pastry Brie & Relish Bites:
1. Preheat oven to 200°C.
2. Cut puff pastry into squares.
3. Place onto lined tray.
4. Add a small cube of brie and a teaspoon of relish.
5. Fold corners slightly inward.
6. Brush with egg wash.
7. Sprinkle thyme on top.
8. Bake 15–18 minutes until golden.
Chef's Tip
Serve these warm or cold — they're gorgeous either way.

Parmesan Cheese Straws:
1. Roll pastry slightly thinner.
2. Brush lightly with egg wash.
3. Sprinkle parmesan, paprika and pepper over.
4. Fold pastry in half and press gently.
5. Cut strips and twist.
6. Bake at 200°C for 12–15 minutes until crisp and golden.
Quick Hummus
1. Blend everything together until smooth.
2. Add cold water gradually for a silky texture.
Chef's Tip
Cold water makes hummus beautifully smooth and creamy.
