Ingredients

Makes 24 bars

  • 450g butter
  • 300g white sugar
  • 2 tsp vanilla extract
  • 660g plain flour
  • 2 tsp baking powder
  • 150g flaked almonds
  • Your choice of jam

Method

  1. Line your baking tin with paper.
  2. Cream the butter, sugar and vanilla till light.
  3. Add the flour and beat again till incorporated.
  4. Next, add the remaining flour and mix till it just forms a dough.
  5. Tip ⅔ of this mix into your lined tray. Press it down evenly, using a rolling pin or a bottle helps.
  6. Next, add your jam. You can use all one flavour, dollops of different ones or do thick stripes. Make it your own creation!
  7. Next, add the flaked almonds to the remaining ⅓ shortbread dough. Sprinkle this evenly over the jam. Bake for 35 mins till the crumble is golden, and the jam is bubbling. Leave to cool completely before cutting into squares.
