Makes 24 bars
- 450g butter
- 300g white sugar
- 2 tsp vanilla extract
- 660g plain flour
- 2 tsp baking powder
- 150g flaked almonds
- Your choice of jam
Method
- Line your baking tin with paper.
- Cream the butter, sugar and vanilla till light.
- Add the flour and beat again till incorporated.
- Next, add the remaining flour and mix till it just forms a dough.
- Tip ⅔ of this mix into your lined tray. Press it down evenly, using a rolling pin or a bottle helps.
- Next, add your jam. You can use all one flavour, dollops of different ones or do thick stripes. Make it your own creation!
- Next, add the flaked almonds to the remaining ⅓ shortbread dough. Sprinkle this evenly over the jam. Bake for 35 mins till the crumble is golden, and the jam is bubbling. Leave to cool completely before cutting into squares.
