Ingredients
- 4 eggs
- 100g bran flakes
- 300 oil
- 325 brown sugar
- 5g baking powder
- 5g bread soda
- 340g plain flour
- 300g carrots grated
- 2 apples grated
- 50g currants
- 60g nibbed almonds
Method
- Grate apple and carrot
- Mix oil, brown sugar together
- Add flour, baking powder and bread soda
- Add all the remaining ingredients and mix well.
- Spoon into bun papers, add some oats on top
- Bake at 180, 18mins
- Check with a pointed knife, if the knife is clean it's cooked.
- Serve as is, or with some whipped cream or natural yogurt as a snack.
