Ingredients

  • 4 eggs
  • 100g bran flakes
  • 300 oil
  • 325 brown sugar
  • 5g baking powder
  • 5g bread soda
  • 340g plain flour
  • 300g carrots grated
  • 2 apples grated
  • 50g currants
  • 60g nibbed almonds

Method

  1. Grate apple and carrot
  2. Mix oil, brown sugar together
  3. Add flour, baking powder and bread soda
  4. Add all the remaining ingredients and mix well.
  5. Spoon into bun papers, add some oats on top
  6. Bake at 180, 18mins
  7. Check with a pointed knife, if the knife is clean it's cooked.
  8. Serve as is, or with some whipped cream or natural yogurt as a snack.
