Ingredients

Cheat meals & fake aways are the meals we probably look forward to most. That doesn't mean they need to have that deep fried feel. This recipe has great freshness to it. Herbs like Parsley & dill & fresh lemon will leave you feeling satisfied without the greasy spoon effect.Prepped and ready in under 30 minutes.

Equipment

  • 1 medium sized Mixing bowl
  • 1 wooden spoon
  • 1 small mixing bowl
  • 1 Grill
  • 8 metal skewers (optional)

For the kofta mix

  • 500g lamb mince
  • I tsp salt
  • 1 tsp red chilli flakes – or fresh chilli
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander

For garnishes

  • 2 tbsp natural yogurt
  • I lemon – juice & zest
  • 1tsp black pepper
  • 2 tbsp fresh dill & mint roughly chopped
  • 1 Red onion – finely sliced
  • 2 tbsp Fresh Flat leaf parsley roughly chopped
  • 1 tbsp Olive oil
  • 4 Naan or flat bread or wraps

Method

  1. In a bowl mix the lamb mince with the salt & seasoningsMake 8 meatballs from the mixRoll the meatballs into a sausage shape, flatten the Kofta to 1 cm thick. If you have metal skewers you can skewer the Kofta before grilling if not just use as is.
  2. Grill the Kofta on a medium heat for eight minutes one side turn over four minutes the other side.
  3. In a small bowl mix the onion, pepper, olive oil, lemon & herbs. Heat your Naan.
  4. Spoon the yougurt on the naan, add your Kofta (two per portion), dress with the herb salad & then to finish zest the lemon over the mix.
  5. Roll up and have as a kebab or you can leave it as is and enjoy with a knife and fork .
