Ingredients

Serves: 4

  • 250g strong flour
  • 1/2 teaspoon olive oil
  • 4 tablespoons olive oil
  • 100ml warm water

Lamb shoulder

  • 1 small boneless lamb shoulder
  • 1 small onion
  • 1 garlic clove
  • Spices - cumin, yum eric, fennel seeds.
  • 1 small chilli or chilli flakes
  • Mint yogurt
  • 1/2 a cucumber grated
  • 200g Greek style yogurt
  • 1 garlic clove
  • Small bunch mint
  • Olive oil
  • Salt and pepper
  • Red onion and tomato salsa
  • 1 tomato
  • 1 small red onion
  • 1 green chill
  • Lemon juice
  • Coriander
  • Sea salt & white pepper
  • Smoked paprika
  • Greaseproof paper

Method

Flatbread

  1. Mix all ingredients to form a dough.
  2. Rest the dough for one hour or over-night.
  3. After leaving the dough to rest, roll the dough out in a circular shape
  4. Tag with olive and grill on a grill pan on one side.

Lamb shoulder

  1. Season the lamb well all around.
  2. Place your seasoned lamb shoulder in the oven at 220 for 20 mins, to crisp and seal the outside.
  3. Pour in lamb stock and reduce the temperature to 150 degrees.
  4. Cover tightly with tinfoil and cook for approx 2-3 hours, until you can push a spoon through.
  5. Once the meat is very soft, take out and set aside, reduce the cooking liquid.
  6. Chop through the meat- and chop any larger bits of fat. Mix altogether.
  7. Heat a pan, add in finely chopped onion and garlic.
  8. Add in spices cumin, turmeric, fennel seeds and a little chilli.
  9. Cook out the spices and add soft lamb to the pan.
  10. Mix well and add a little reduced stock If needed.

Mint Yogurt

  1. Grate the cucumber, and squeeze all the juice so it's dry, (if too much juice will make the yogurt
  2. watery!)
  3. Grate the garlic, chop mint fine
  4. Mix altogether and taste -add a little olive oil.
  5. Season.

Red onion and tomato salsa

  1. Dice tomato and red onion into small pieces
  2. Finely chopped coriander and green chilli.
  3. Add a squeeze of lemon juice and a little olive oil.

To assemble

  1. Spread the mint yogurt on the flatbread
  2. Followed by nice crunchy Iceburg lettuce.
  3. A spoon of spiced lamb mix and finish with salsa on top.
  4. Roll together and enjoy
