Mags got this recipe from Jim McDermott, who is 93 years young! He still works in his pub- Jim McDermott's in Tullow, Co. Carlow. He makes a different cake for his customers every Wednesday evening, and they all taste it at 9pm.
Ingredients
- 300 ml cold tea
- 30ml whiskey
- 4oz brown sugar
- 9oz flour
- 1lb sultanas
- 1 tsp bread soda
- 1 tsp mixed spice
- 1 egg
Method
- Soak the sugar and fruit overnight
- Mix flour, bread soda and spice
- Add egg.
- Cook at 180 degrees 50-60 mins
- Serve with a good lump of real butter and a strong cup of tea.
