Meat-Free Week! Week 3 dinner idea: OT: Sweet n' Sour Cashew Nut & Vegetable Stir Fry.


  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 courgette, sliced
  • 10g broccoli, cut into florets 
  • 100g mushrooms, sliced 
  • 55g cashew nuts
  • 50g pineapple, cut into chunks
  • 100g wholewheat noodles

Food Staples:

  • 1 tablespoon olive oil
  • 1/2 teaspoon chilli flakes
  • 1 tablespoon honey
  • 2 tablespoons light soy sauce 
  • 1 tablespoon rice vinegar        


  1. Bring a pan of water to the boil, add noodles and simmer for approximately 5 minutes, stirring occasionally
  2. Heat the olive oil in a wok or pan and stir fry the onions for 1-2 minutes
  3. Add in the carrots, courgettes and broccoli and stir fry for 2-3 minutes
  4. Add the mushrooms, pineapple, honey, soy sauce and vinegar and cook for a further 1-2 minutes
  5. In a separate pan, dry fry the cashew nuts for approximately 1 minute and add to the vegetables
  6. Serve the cashew nut and vegetable mixture with the wholewheat noodles
