Meat-Free Week! Week 3 dinner idea: OT: Sweet n' Sour Cashew Nut & Vegetable Stir Fry.
Ingredients
- 1 onion, chopped
- 2 carrots, chopped
- 1 courgette, sliced
- 10g broccoli, cut into florets
- 100g mushrooms, sliced
- 55g cashew nuts
- 50g pineapple, cut into chunks
- 100g wholewheat noodles
Food Staples:
- 1 tablespoon olive oil
- 1/2 teaspoon chilli flakes
- 1 tablespoon honey
- 2 tablespoons light soy sauce
- 1 tablespoon rice vinegar
Method
- Bring a pan of water to the boil, add noodles and simmer for approximately 5 minutes, stirring occasionally
- Heat the olive oil in a wok or pan and stir fry the onions for 1-2 minutes
- Add in the carrots, courgettes and broccoli and stir fry for 2-3 minutes
- Add the mushrooms, pineapple, honey, soy sauce and vinegar and cook for a further 1-2 minutes
- In a separate pan, dry fry the cashew nuts for approximately 1 minute and add to the vegetables
- Serve the cashew nut and vegetable mixture with the wholewheat noodles
