The combination of white fish and spinach gives for a particularly healthy offering. Watch Operation Transformations video tutorial and get cooking!

Ingredients:

  • 100g whole wheat spaghetti
  • 1 tsp rapeseed oil
  • 1 garlic clove, chopped
  • 100g baby spinach
  • 100g light cream cheese zest
  • juice of 1 lemon
  • 250g white fish
  • handful of basil 
  • finely chopped black pepper to season

Method:

  1. Place pasta in a pot of boiling water and simmer until cooked.
  2. Add the oil to a pan on medium heat and add the garlic until softened. Add the fish and fry for 5 minutes and then turn to cook the other side. Once cooked remove the fish.
  3. Add the spinach to the pan and continue to cook until slightly wilted.
  4. Stir though the cream cheese, lemon zest and juice and some black pepper
  5. Drain the water from the cooked pasta and add to the cream cheese sauce along with the basil.
  6. Season with salt and pepper if desired.
