Ingredients:
- 100g whole wheat spaghetti
- 1 tsp rapeseed oil
- 1 garlic clove, chopped
- 100g baby spinach
- 100g light cream cheese zest
- juice of 1 lemon
- 250g white fish
- handful of basil
- finely chopped black pepper to season
Method:
- Place pasta in a pot of boiling water and simmer until cooked.
- Add the oil to a pan on medium heat and add the garlic until softened. Add the fish and fry for 5 minutes and then turn to cook the other side. Once cooked remove the fish.
- Add the spinach to the pan and continue to cook until slightly wilted.
- Stir though the cream cheese, lemon zest and juice and some black pepper
- Drain the water from the cooked pasta and add to the cream cheese sauce along with the basil.
- Season with salt and pepper if desired.
