  • 2 fillets (240g) salmon
  • 6 new potatoes (250g)
  • 1/2 a lemon
  • 1 tspn of white wine vinegar
  • black pepper to taste
  • 60g of lettuce
  • 2 scallions
  • 12 cherry tomatoes
  • 12 slices of cucumber
  • 1 apple
  • 125g of natural yogurt (3% fat)

Method

  1. Grill the salmon under a medium heat for 5-7 minutes on each side.
  2. Place a pot of cold water on a medium heat. Add the potatoes and cook until tender for 35/40 minutes.
  3. In a bowl, combine the lemon juice, vinegar, black pepper and natural yogurt. Take the cook drained potatoes and slice. Toss them in the yogurt dressing.
  4. Now add the prepared salad vegetables top with the salmon and garnish with herbs.
