- 2 fillets (240g) salmon
- 6 new potatoes (250g)
- 1/2 a lemon
- 1 tspn of white wine vinegar
- black pepper to taste
- 60g of lettuce
- 2 scallions
- 12 cherry tomatoes
- 12 slices of cucumber
- 1 apple
- 125g of natural yogurt (3% fat)
Method
- Grill the salmon under a medium heat for 5-7 minutes on each side.
- Place a pot of cold water on a medium heat. Add the potatoes and cook until tender for 35/40 minutes.
- In a bowl, combine the lemon juice, vinegar, black pepper and natural yogurt. Take the cook drained potatoes and slice. Toss them in the yogurt dressing.
- Now add the prepared salad vegetables top with the salmon and garnish with herbs.
