Operation Transformation stirs up a one dish wonder

Ingredients:

  • 120g wholegrain rice
  • 1 tablespooin of rapeseed oil
  • 250g lean pork strips
  • 2 cloves of garlic, chopped
  • 1 onion, sliced
  • 2 carrots, sliced
  • 12 button mushrooms, sliced
  • 1 red pepper, deseeded and chopped
  • 1 tablespoon of reduced sodium salt soy sauce

Method:

  1. In a pot of cold water, add in the rice. Cook until light and fluffy.
  2. Heat the oil in a frying pan and fry the pork strips for 5-6 minutes until browned on all sides
  3. Add the garlic, onion and carrot to the pan and fry for 2-3 minutes, stirring all the time
  4. Then add the mushrooms and peppers to pork mixture and continue frying for 2-3 minutes
  5. Finally add the soy sauce and cook the stir fry for a further 5 minutes
  6. Serve the rice topped with the pork stir fry
