Operation Transformation stirs up a one dish wonder
Ingredients:
- 120g wholegrain rice
- 1 tablespooin of rapeseed oil
- 250g lean pork strips
- 2 cloves of garlic, chopped
- 1 onion, sliced
- 2 carrots, sliced
- 12 button mushrooms, sliced
- 1 red pepper, deseeded and chopped
- 1 tablespoon of reduced sodium salt soy sauce
Method:
- In a pot of cold water, add in the rice. Cook until light and fluffy.
- Heat the oil in a frying pan and fry the pork strips for 5-6 minutes until browned on all sides
- Add the garlic, onion and carrot to the pan and fry for 2-3 minutes, stirring all the time
- Then add the mushrooms and peppers to pork mixture and continue frying for 2-3 minutes
- Finally add the soy sauce and cook the stir fry for a further 5 minutes
- Serve the rice topped with the pork stir fry
