Ingredients:
- 200g tuna, drained
- 60g lettuce
- 1 onion, thinly sliced
- 8 cherry tomatoes
- 8 slices of cucumber
- 1 pepper, deseeded and chopped
- 400g tin of mixed beans, drained and rinsed
- 2 teaspoon of rapeseed oil
- 2 teaspoon of balsamic vinegar
- juice of 1 lemon
- 1 pear, sliced
Method:
- In a salad bowl add the lettuce, onion, cherry tomatoes, cucumber, pepper, mixed beans, pear and tuna Toss the salad thoroughly!
- In a small bowl add the lemon juice, balsamic vinegar and oil. Stir these together.
- Add the dressing to the salad and toss until it's covered in the dressing.
