Ingredients

  • chicken drumsticks
  • chilli powder
  • garlic powder
  • 2 eggs
  • dash of milk
  • 200g of flour
  • wholemeal breadcrumbs
  • cajun spice
  • olive oil
  • 4 corn on the cob

Winter slaw:

  • red cabbage
  • red onion
  • white wine vinegar
  • honey
  • pinch of salt

Method

Guaranteed to get everyone to the table - Southern Fried Chicken from Chef Adrian Martin as part of the RTÉ Player Food Bites series.

  1. Cut up the chicken legs into tighs and drumstocks.
  2. Mix chilli powder, garlic powder and salt over the chicken.
  3. Drizzle of oil over the chicken.
  4. Bake in oven for 30 minutes at 180C.
  5. Set up station of 3 bowels.
  6. Bowl 1 has flour.
  7. Bowl 2 has beaten egg and milk.
  8. Bowl 3 has whole meal breadcrumbs,1 tbsp of cajun spice and dash of olive oil.
  9. After the chicken is cooked coat in mixture by dipping in the flour then egg wash and then breadcrumbs.
  10. Place the chicken back in the oven to cook for another ten minutes.
  11. Place the 4 small corn on the cob on a dry pan and char all over.
  12. Char the corn on the cob all over turning every now and again.
  13. For the winter slaw slice the red onion and red cabbage. Now add the white wine vinegar, honey and sea salt.
  14. Once the chicken is cooked now you can serve it all up. On with the crispy chicken, on the side then with the charred corn and delicious slaw. Enjoy.
