Ingredients

  • 24 fresh oysters
  • 4 limes cut into wedges
  • 50 g fried shallots
  • 0.5 chilli finely chopped
  • 2 bird's-eye chillies finely chopped
  • 0.5 dsp shallot finely chopped
  • 0.5 dsp garlic finely chopped
  • 0.5 dsp coriander stalk, finely chopped
  • 1.5 dsp fish sauce
  • 1 dsp lime juice
  • 1 tsp sugar
  • 0.5 dsp hot chilli sauce

Method

  1. To prepare the dressing, put all of the ingredients for the sauce into a bowl and mix well, then keep to one side.
  2. Open the oysters and serve on crushed ice.
  3. Accompany the oysters with lime wedges, fried shallots and the chilli lime dressing.
