Ingredients
- 24 fresh oysters
- 4 limes cut into wedges
- 50 g fried shallots
- 0.5 chilli finely chopped
- 2 bird's-eye chillies finely chopped
- 0.5 dsp shallot finely chopped
- 0.5 dsp garlic finely chopped
- 0.5 dsp coriander stalk, finely chopped
- 1.5 dsp fish sauce
- 1 dsp lime juice
- 1 tsp sugar
- 0.5 dsp hot chilli sauce
Method
- To prepare the dressing, put all of the ingredients for the sauce into a bowl and mix well, then keep to one side.
- Open the oysters and serve on crushed ice.
- Accompany the oysters with lime wedges, fried shallots and the chilli lime dressing.
