This is a really simple and lovely ice to make with our furry friends. The sauce is delicious and makes the whole combination into a thoroughly refreshing dessert. I serve this with Sugar Biscuits.


Ingredients

  • 700g kiwi fruit (approximately 9 fruit)
  • 1 lime, zested and juiced
  • 110g caster sugar
  • For the Sauce:
  • 225ml freshly squeezed orange juice
  • 3 passion fruit, halved and contents sieved to extract the juice
  • 40-50g caster sugar or to taste

Method

  1. Freshly squeezed orange juice comes from an orange and not a manmade container of any description.
  2. Passion fruit juice, like the orange, is something I can only consider if freshly released from nature's packaging.
  3. For the granita, put the sugar in a bowl and add the zest and juice of the lime. Peel the kiwi fruit using a swivel top peeler and make sure to remove the woody piece from the stalk end of the fruit.
  4. Chop the peeled kiwis coarsely and add to the sugar and lime. Blend briefly until smooth in a liquidiser or with a hand held blender. If you over-blend them the little black seeds may be crushed, in which case the granita may become a bit peppery and the colour will be spoiled.
  5. Place the bowl in the freezer to freeze and set.
  6. When the mixture is semi-frozen or slushy looking, remove and whisk it vigorously to break up the large crystals of kiwi ice.
  7. Replace the mixture in the freezer and repeat the process 3 more times. By then the ice should be a granita and ready to serve when it suits you.
  8. For the sauce, mix the orange juice and passion fruit juice in a bowl and add the sugar. Whisk vigorously to dissolve the sugar completely. Taste and correct the sweetness if necessary.
  9. Serve the granita in coarse shards with some of the sauce poured over.
