Rachel Allen shows you a quick and easy dessert to make, which doesn't compromise on taste.
Ingredients
- 500g (1lb 2oz) watermelon flesh (about ¼ watermelon)
- 30g (2oz) peeled and seeded cucumber (optional)
- juice of 1 lime
- 100ml (3 ½ fl oz) gin
- 1-2 tsp sugar, to taste (optional)
Method
- Pick out the seeds from the watermelon and place in a food processor with the cucumber, if using.
- Blitz with the lime juice until smooth, then push through a sieve.
- Add the gin, transfer to a freezeable container and freeze.
- Whisk the mixture several times throughout the freezing process.
