Rachel Allen shows you a quick and easy dessert to make, which doesn't compromise on taste.

Ingredients

 

  • 500g (1lb 2oz) watermelon flesh (about ¼ watermelon)
  • 30g (2oz) peeled and seeded cucumber (optional)
  • juice of 1 lime
  • 100ml (3 ½ fl oz) gin
  • 1-2 tsp sugar, to taste (optional)

Method

  1. Pick out the seeds from the watermelon and place in a food processor with the cucumber, if using.
  2. Blitz with the lime juice until smooth, then push through a sieve.
  3. Add the gin, transfer to a freezeable container and freeze.
  4. Whisk the mixture several times throughout the freezing process.
