This recipe offers two twists on the traditional Boxty recipe
Ingredients
- 125 g Odlums cream plain flour
- 1 tsp baking powder
- 125 g grated raw potato
- 125 g cold mashed potato
- good pinch salt
- a few tablespoons of milk
- 1 egg (beaten)
- oil & butter for frying

Method
- Place the raw potato into a clean tea towel or kitchen paper, squeeze out all the excess liquid (starch).
- Place in mixing bowl. Add the remaining ingredients and mix well.
- Heat a little oil and butter in a pan and drop spoonfuls of the mixture on hot pan and fry until golden brown on each side.
- Serve hot.
Method 2 - Mixture
