From episode three of MasterChef Ireland 2012

Ingredients

  • 2 cup flour
  • 1 cup caster sugar
  • 200 g butter
  • 3 eggs
  • 100 ml double cream
  • vanilla pod
  • 2 stalks rhubarb
  • 100 g crystalize ginger
  • lemon rind of half lemon
  • 50 g almond

Method

  • Mix the egg yolks with ½ cup of sugar and vanilla pod. Whisk in the cream over medium heat until thick

Method

  • Sauté the rhubarb in the pan with lemon rid, half cup of sugar and crystallised ginger.
  • To make the topping mix the butter with flour and caster sugar until breadcrumb like.
  • Then mix in the almonds. Place on top of the rhubarb and place in oven at 180° for 20 minutes.
  • Serve with custard
