From episode three of MasterChef Ireland 2012
Ingredients
- 2 cup flour
- 1 cup caster sugar
- 200 g butter
- 3 eggs
- 100 ml double cream
- vanilla pod
- 2 stalks rhubarb
- 100 g crystalize ginger
- lemon rind of half lemon
- 50 g almond
Method
- Mix the egg yolks with ½ cup of sugar and vanilla pod. Whisk in the cream over medium heat until thick
Method
- Sauté the rhubarb in the pan with lemon rid, half cup of sugar and crystallised ginger.
- To make the topping mix the butter with flour and caster sugar until breadcrumb like.
- Then mix in the almonds. Place on top of the rhubarb and place in oven at 180° for 20 minutes.
- Serve with custard
