Dr Eva Orsmond serves up a pizza at just 450 calories.
Ingredients
- tomato sauce:
- 1 tsp olive oil
- 0.5 small onion (approx. 50g, chopped)
- 1 can of chopped tomatoes (approx. 400g)
- 0.5 cube of beef stock
- black pepper
- pizza dough:
- 1/3 of regular baking yeast sachet (approx. 5ml or less than a tsp)
- 70 g white flour
- 50 ml water
- 1 tsp olive oil
- filling:
- 1 courgette (approx. 150g)
- 0.5 small red onion (approx. 50g)
- 1 small red pepper (approx. 100g)
- 125 g light mozzarella cheese
- fresh basil leaves
Method
- Preheat your oven to 200°C.
- Slice red pepper, red onion and courgette and place them on an oven dish that has been sprayed with olive oil.
- Cook in 200°C for 12-15mins.
- In the meantime prepare the pizza dough. In a bowl mix luke warm water with the dry yeast and olive oil. Add the white flour and mix to create a round ball. Let rise in a warm place for 20 mins.
- Chop onion and warm the oil in a saucepan. Add the chopped onion and let fry for a few minutes. Add the can of tomatoes and seasoning.
- Leave to simmer and let the extra water to evaporate to create a thick sauce.
- Sprinkle a table surface with flour and with a help of a rolling pin create a round pizza that you will place on an oven tray, which has baking paper.
- Cover with tomato sauce and grilled vegetables.
- Slice Mozzarella cheese and place on the top of it.
- Cook in oven for approx. 13-15 mins until dough is cooked.
