Cost effective, tasty meal at only €2.50
Ingredients
- 40 g capers (both chopped roughly not to fine we need texture)
- 720 g haddock (or 4 fillets, skinned)
- 1 egg
- 25 ml milk
- 50 g flour
- 100 g bread crumbs
- salt and pepper
- tartar sauce:
- 40 g gherkins
- 40 g finely chopped shallots
- 50 g fresh flat leaf parsley
- 1 lemon
- mayonnaise:
- 1 egg
- 100 ml vegetable oil
- salt and pepper
Method
- Mayo:
- Mix the egg with water and season whisking the oil in slowly. Combine with tartar ingredients and taste.
- Bread crumb:
- Season the flour. Mix the egg and the milk and place the flour, egg and milk, breadcrumbs in 3 different bowls.
- Season the fish and place into flour then egg wash and finally bread crumbs.
- Place on a tray until ready to cook. Heat the fryer to 180°C and add the haddock to the fryer and gently shake so the fish is not sticking together.
- Cook until golden. Put onto kitchen roll and season.
- Serve with the tartar sauce and chips.
