A delicious sauce for pouring over desserts.


  • 125 ml whipping cream
  • 30 g unsalted butter
  • 45 g cocoa powder (sifted)
  • 60 g caster sugar
  • 60 g soft dark brown sugar
  • pinch of salt


  • Place all the ingredients in a heavy-based saucepan.
  • Stir over a gentle heat until the mixture is smooth and melted.
  • Increase the heat slightly and continue to cook the sauce for 2-3 minutes.
