Try something different with this Courgette Frittata recipe.
Ingredients
- 5 whole eggs
- 100 ml milk
- salt and pepper
- fresh herbs (thyme and tarragon)
- 4 cooked potatoes
- 1 sliced courgette
- 1 chopped red onion
- 2 tblsp grated parmesan
- olive oil
- to serve:
- sliced cooked ham
- local cheddar
- smoked salmon
- marinated globe artichokes
- cornichons
- caperberries
Method
- Whisk the eggs in a bowl with the milk, salt and pepper.
- Gently fry the onion in the olive oil until slightly softened but not coloured.
- Add the courgettes and fry for a further 4 to 5 minutes until softened.
- Add the herbs and mix.
- Add the chopped or sliced cooked potatoes.
- Add the chopped or sliced cooked potatoes.
- Season with salt and pepper.
- Pour the egg mix over the vegetables.
- Grate the parmesan on top and bake at 165°C for 15-20 minutes until just set and golden.
