The garda sergeant, who is in his late 40s and is married with a family, is in a stable condition after undergoing surgery at Cork University Hospital.
Gardaí were called to a nightclub at Ashe Quay in Fermoy at around 1.20am today. The 26-year-old had produced two knives after being refused admission.
They tried to persuade him to disarm but were unsuccessful.
The man stabbed a garda sergeant in the stomach. He then made his way to St James's Place where efforts continued to disarm him.
