Ingredients
- 2–3 smoked mackerel fillets (peppered or plain)
- 400g baby new potatoes
- 100g fine green beans
- 4–5 radishes, thinly sliced
- 2 spring onions, finely sliced
- Small handful dill, chopped
- 2 tbsp olive oil
- 1 tbsp red pesto
- 2 tbsp Skyr or mayonnaise
- Juice of ½ lemon
Method
- Bring a pan of salted water to the boil. Add the potatoes and simmer for 10-12 minutes, until just tender.
- Add the green beans for the final 3 minutes. Drain and leave to cool slightly.
- Whisk together all dressing ingredients in a small bowl or jar. Season well.
- In a large bowl, toss the potatoes, green beans, radish, spring onions, and dill with the dressing.
