Lilly Higgins: Daniel's smoked mackerel salad

Ingredients

  • 2–3 smoked mackerel fillets (peppered or plain)
  • 400g baby new potatoes
  • 100g fine green beans
  • 4–5 radishes, thinly sliced
  • 2 spring onions, finely sliced
  • Small handful dill, chopped
  • 2 tbsp olive oil
  • 1 tbsp red pesto
  • 2 tbsp Skyr or mayonnaise
  • Juice of ½ lemon

Method

  1. Bring a pan of salted water to the boil. Add the potatoes and simmer for 10-12 minutes, until just tender.
  2. Add the green beans for the final 3 minutes. Drain and leave to cool slightly.
  3. Whisk together all dressing ingredients in a small bowl or jar. Season well.
  4. In a large bowl, toss the potatoes, green beans, radish, spring onions, and dill with the dressing.
