A delicious take on the classic.
Ingredients
For the Stroganoff
- 600g pork fillet-sliced thinly
- 1 tbsp olive oil
- 1 white onion, finely sliced
- 2 cloves garlic, minced
- 250g mixed mushrooms preferably chestnut
- 1 tsp Dijon mustard
- 2 tsp smoked paprika
- 150ml chicken stock
- 150g light crème fraiche or Greek yoghurt
- Salt and black pepper
- Fresh parsley, chopped (optional)
To Serve
- 300g wholewheat pasta - tagliatelle works well
- 200g tenderstem broccoli or green beans
- 1 tsp olive oil
- Pinch sea salt
Method
1. Cut the pork fillet and veg into thin strips.
2. Heat the pan and add the oil - flash fry your pork.
3. Add in your onions and garlic and paprika and mustard.
4. Add in your stock and simmer for 15 minutes.
5. Stir in your yogurt and season well.
6. Serve on your bed of tagliatelle and greens.
