Trisha Lewis's beef sirloin stir fry with sesame, chilli and greens

High quality beef adds even more flavour to this stir fry.

Ingredients

Serves 4

  • 500g sirloin steak, thinly sliced against the grain
  • Rice/noodles
  • Lime wedges
  • 1 tbsp cornflour
  • 3 tbsp soy sauce (divided)
  • 2 tsp sesame oil (divided)
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 2 scallions (spring onions), sliced
  • 1 small head broccoli, cut into small florets
  • 1 handful mangetout
  • 1 small tin baby corn, halved lengthways
  • 3 cloves garlic, finely chopped
  • 1 tbsp fresh ginger, grated
  • 1 red chilli, finely sliced
  • 1 tbsp oyster sauce
  • 1–2 tsp sriracha
  • 2–3 tbsp water
  • Fresh coriander
  • Sesame seeds
  • Neutral oil for frying
  • Black pepper

For the Sauce (make separately before cooking)

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1–2 tsp sriracha
  • 1 tsp sesame oil
  • 2–3 tbsp water

Method

1. Toss beef with cornflour, 1 tbsp soy sauce and 1 tsp sesame oil.

2. Mix sauce ingredients in a bowl.

3. Sear beef quickly in a very hot pan. Remove.

4. Stir fry vegetables.

5. Add garlic, ginger and chilli.

6. Return beef, pour in sauce and toss until glossy.

7. Finish with scallions, coriander and sesame seeds.

8. Serve with rice or noodles
