Ingredients
- 250g plain flour
- ¼ tsp salt
- Black pepper
- 2 eggs
- 600ml milk
- 30g melted butter
Quick Béchamel Sauce
- 25g butter
- 25g flour
- 250ml milk
- Pinch nutmeg
- Salt & white pepper
- 60g grated Coolattin Cheddar
Filling:
- 6–8 slices good quality ham
- 100g grated Coolattin cheddar
- Mustard (optional)
Method
- Whisk the egg and half the milk together first
- Add flour and salt and pepper, whisk very well.
- Add the rest of the milk & melted butter. Whisk to a smooth batter.
- Rest 10 minutes.
Quick Béchamel Sauce
- Melt butter, stir in flour → cook 1 min.
- Gradually whisk in milk. Simmer until thick.
- Season, add nutmeg & cheese. Stir till smooth.
To Cook & Assemble:
- Heat a non-stick pan with a little butter.
- Pour small ladles of batter to make thick pancakes. Cook 2 min each side.
- Stack: Pancake, Dijon (thin smear), Ham, Cheese, Béchamel, Pancake → repeat
- Finish with béchamel + extra cheese on top. Grill until bubbling & golden.
- Serve with dressed rocket salad with lemon + olive oil or a sharp green salad to cut through the richness.
