Ingredients

  • 250g plain flour
  • ¼ tsp salt
  • Black pepper
  • 2 eggs
  • 600ml milk
  • 30g melted butter

Quick Béchamel Sauce

  • 25g butter
  • 25g flour
  • 250ml milk
  • Pinch nutmeg
  • Salt & white pepper
  • 60g grated Coolattin Cheddar

Filling:

  • 6–8 slices good quality ham
  • 100g grated Coolattin cheddar
  • Mustard (optional)

Method

  1. Whisk the egg and half the milk together first
  2. Add flour and salt and pepper, whisk very well.
  3. Add the rest of the milk & melted butter. Whisk to a smooth batter.
  4. Rest 10 minutes.

Quick Béchamel Sauce

  1. Melt butter, stir in flour → cook 1 min.
  2. Gradually whisk in milk. Simmer until thick.
  3. Season, add nutmeg & cheese. Stir till smooth.

To Cook & Assemble:

  1. Heat a non-stick pan with a little butter.
  2. Pour small ladles of batter to make thick pancakes. Cook 2 min each side.
  3. Stack: Pancake, Dijon (thin smear), Ham, Cheese, Béchamel, Pancake → repeat
  4. Finish with béchamel + extra cheese on top. Grill until bubbling & golden.
  5. Serve with dressed rocket salad with lemon + olive oil or a sharp green salad to cut through the richness.
