Christmas with Mark Moriarty: cauliflower and cheese gratin

Ingredients

Serves 4

  • 1 head of cauliflower, cut into thumb-sized florets
  • 40g butter
  • 40g plain flour
  • 500ml milk
  • 150g grated comte cheese, grated (and a handful more for garnish)
  • 1 tbsp dijon mustard
  • Squeeze of lemon juice
  • 30g breadcrumbs

Method

  1. Preheat your oven to 200c. Start with your cheese sauce. Place the flour and butter in an oven-proof pan, and begin cooking it out over a high heat, whisking all the time.
  2. Once the mix is bubbling, add the milk while continuously whisking. Once a thickened sauce forms, remove the pan from the heat.
  3. Season the sauce with the grated cheese, mustard, lemon juice and some salt. Add the cauliflower and mix thoroughly. Top the mix with the breadcrumbs and some extra grated cheese.
  4. Place in the oven and cook for 20mins until bubbling and caramelised on top.
