Ingredients
Serves 4
- 1 head of cauliflower, cut into thumb-sized florets
- 40g butter
- 40g plain flour
- 500ml milk
- 150g grated comte cheese, grated (and a handful more for garnish)
- 1 tbsp dijon mustard
- Squeeze of lemon juice
- 30g breadcrumbs
Method
- Preheat your oven to 200c. Start with your cheese sauce. Place the flour and butter in an oven-proof pan, and begin cooking it out over a high heat, whisking all the time.
- Once the mix is bubbling, add the milk while continuously whisking. Once a thickened sauce forms, remove the pan from the heat.
- Season the sauce with the grated cheese, mustard, lemon juice and some salt. Add the cauliflower and mix thoroughly. Top the mix with the breadcrumbs and some extra grated cheese.
- Place in the oven and cook for 20mins until bubbling and caramelised on top.
