Ingredients

- 12 Irish Rooster potatoes. Peeled and halved
- Sea salt
- 100g beef dripping
Method
1. Preheat your oven to 200c. Place a heavy-based roasting tray inside with the wagyu beef dripping.
2. Place the halved potatoes in a large pot and cover with cold water. Season heavily with salt and bring to the boil. Reduce the water to a simmer and cook for 10 mins until the potatoes are just soft.
3. At this point, carefully strain the potatoes before placing them on a wire rack to dry out. Leave them here for at least 10mins.
4. Carefully transfer the potatoes to the hot tray in the oven and cook for 35 to 40mins until golden brown, shaking regularly.
