Christmas with Mark Moriarty: scallops 'Pil Pil' on toast

Ingredients

Serves 2

  • 2 slices of sourdough bread
  • 6 tbsp olive oil
  • 10 extra large scallops, roe removed and cleaned
  • 4 garlic cloves, peeled and sliced
  • 1 chilli, finely sliced
  • 2 lemon wedges
  • 1 handful of parsley, finely chopped
  • Sea salt

Method

1. Start by getting your sourdough toasting. Take the scallops out of the fridge 10 minutes before cooking.

2. Heat a large non-stick pan, add the olive oil and allow it to get hot. Place the scallops in the pan where the oil collects. Allow them to caramelise on one side for 1 minute before adding the garlic and chilli to the pan. Season the scallops with salt and flip them over. Baste them for a further minute in the flavoured oil until they are deep golden brown.

3. Remove the scallops from the pan and place them on your toasted sourdough. Don't discard the oil from the pan. Add a squeeze of lemon juice to the oil along with the chopped parsley and dress the toast with it. Serve warm.
