This will be a showstopper this Christmas!
Ingredients
- 6 large egg whites
- 350g caster sugar
- 1 tsp white wine vinegar
- 1 tsp cornflour
Method
- Heat oven to 140°C Line a baking tray with parchment.
- Place a bowl in the centre of the tray and use it as a guide. Spoon meringue around the bowl to form a ring shape, then lift the bowl away to create the hole in the centre.
- Whisk the egg whites to soft peaks, then slowly add the sugar while whisking until stiff and glossy.
- Mix vinegar and cornflour together and fold into the meringue.
- Shape and smooth the meringue ring as desired.
- Place in the oven. Bake for 1–1¼ hours until crisp on the outside.
- Turn off the oven and leave to cool for 1 hour or overnight.
- Fill with whipped cream (vanilla + icing sugar) and top with berries, pomegranate seeds and mint.
- Dust with icing sugar to finish.
