This will be a showstopper this Christmas!

Ingredients

  • 6 large egg whites
  • 350g caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp cornflour

Method

  1. Heat oven to 140°C Line a baking tray with parchment.
  2. Place a bowl in the centre of the tray and use it as a guide. Spoon meringue around the bowl to form a ring shape, then lift the bowl away to create the hole in the centre.
  3. Whisk the egg whites to soft peaks, then slowly add the sugar while whisking until stiff and glossy.
  4. Mix vinegar and cornflour together and fold into the meringue.
  5. Shape and smooth the meringue ring as desired.
  6. Place in the oven. Bake for 1–1¼ hours until crisp on the outside.
  7. Turn off the oven and leave to cool for 1 hour or overnight.
  8. Fill with whipped cream (vanilla + icing sugar) and top with berries, pomegranate seeds and mint.
  9. Dust with icing sugar to finish.
